Ingredients
- 2 green bell peppers, sliced and seeded
- 1 large yellow onion, sliced
- 1 tbsp fresh garlic
- 8 oz fresh mushrooms, quartered
- 2 tbsp EVOO (extra virgin olive oil)
- 1 tsp paprika
- 4 boneless skinless chicken breasts
- 2 cans Italian tomato sauce
- 1 large can diced tomatoes in sauce
- steamed white rice
- Brown chicken on stove top.
- While chicken is browning, heat EVOO in a large skillet.
- Lightly brown bell pepper, onion and mushrooms in the oil, then add in garlic and continue browning for another minute or so.
- Place tomato sauce and diced tomatoes in pan with browned chicken.
- once stirred, add paprika and the fried ingredients from the oil.
- Cover and simmer for 40 minutes after bringing to a boil.
- serve over a bed of steamed white rice.
Serves 4.
