Tilapia Grill Packets

Ingredients




Fresh or thawed tilapia
Fresh carrots; peeled and sliced
Green Bell Pepper; cut in bite size chunks
Yellow onion; cut into bite size chunks
Butter or margarine
Lawry's seasoning salt
Black pepper


1. Lay out a small sheet of non-stick foil for each piece of fish and spray with cooking spray.
2. Place each piece of fish on its own sheet of foil. Add carrots (feel free to add veggies of your choice), bell pepper and onion around the edges of the fish.

3. Generously season with seasoning salt and pepper.

4. Place 1 tablespoon of butter or margarine on top of tilapia.

5. Close foil packets by folding across and then folding the sides in.
6. Place packets on pre-heated grill on medium for 10 minutes.
7. Serve with a side of steamed rice.

Spaghetti Sauce

Ingredients


  • 1 small can (6 oz) tomato paste
  • 1 large can (28 oz) whole peeled tomatoes in juice
  • 1 can (14.5oz) tomato sauce
  • 1 package of Lawry Extra Rich & Thick spaghetti seasoning mix
  • 1/4 tsp italian seasoning
  • 1/2 lb of ground beef or italian sausage
  • 1/2 cup mushrooms, sliced (optional)

1. Brown the italian sausage in a large skillet or fully cook the ground beef, drain if necessary.

2. Add tomato sauce, whole tomatoes and tomato paste. Stir.

3. Add Lawrys seasoning mix and italian seasoning. Stir well.

4. Bring to a boil. Add mushrooms if desired and reduce heat to low.

5. Simmer for 30 minutes and serve over noodles.

Tomato Beef Chow Mein

Ingredients
  • 1 large can of peeled tomatoes in juice
  • 1 green bell pepper, seeded and cut into strips
  • 1 small yellow onion, cut into large chunks
  • 1 lb. of round steak; cut in strips
  • 1/2 tsp black pepper
  • 1 pkg dry chow mein noodles

  1. Place a small amount of oil in a large skillet and brown round steak.
  2. Add onion and bell pepper and brown slightly.
  3. Add can of peeled tomatoes and black pepper.
  4. Bring to a boil and simmer for about 20 minutes.
  5. Add chow mein noodles to boiling water for a minute or two until soft. Drain.
  6. In a frying pan, add oil and fry cooked noodles, only coating the bottom of the pan. Flip over with a spatula so both sides get slightly crispy. Repeat until all noodles are prepared.
  7. Serve sauce over pan-fried chow mein noodles. Also goes well over steamed rice.

Mac N Cheese

Ingredients
  • 1 lb of elbow macaroni noodles, cooked
  • 2 heaping tbsp sour cream
  • 1/2 stick of sweet cream butter
  • 2 eggs, beaten
  • 1 cup milk
  • 1 16oz block of cheddar cheese, grated

  1. In a large mixing bowl, place cooked noodles, butter, sour cream and eggs. Stir.
  2. Add in cheddar cheese and milk. Stir well.
  3. Place into a 13x9 glass baking dish or similar and cover with foil.
  4. Bake at 350 for 45 minutes, leaving uncovered the last 15 minutes.

Grilled Corn on the Cob

Ingredients
  • desired amount of fresh corn on the cob, shucked
  • melted sweet cream butter
  • Lawry's Seasoned Salt
  • black pepper

  1. Place corn on a piece of foil big enough to roll the cob in.
  2. Brush generously with melted butter.
  3. Sprinkle generous amount of both seasoned salt and black pepper.
  4. Roll in the foil.
  5. Cook on high for 20-25 minutes.

Pot Roast

Ingredients
  • rump roast or pot roast
  • 1 pkg of Lipton dry onion soup mix
  • 1 can french onion soup
  • 2 cans beef broth
  • 2 cans beef consomme
  • 1 onion cut into large pieces for flavor
  • desired amount of carrots; peeled and cut in half
  • desired amount of potatoes; peeled and cut in thirds

  1. In a large stock pot, brown roast on both sides.
  2. Add in soup mix, beef broth, beef consomme, and french onion soup.
  3. Stir and bring to a boil. Simmer for 3 hours.
  4. Add onion, potatoes and carrots and simmer an additional 50-60 minutes until vegetables and meat are completely tender.

Grilled Red Potatoes

Ingredients

  • desired amount of red potatoes (usually end up to be about 1 to 1 1/2 per person depending on the size of the potatoes)
  • EVOO
  • salt
  • pepper
  • rosemary or garlic powder (optional)
  1. Cut potato into about 8 equal pieces and place on a piece of aluminum foil.
  2. Brush the top of each potato with EVOO.
  3. Sprinkle with salt and pepper.
  4. OPTION: sprinkle with a SMALL amount of rosemary OR a garlic powder.
  5. Fold packet up well, so that no oil leaks out while on the grill.
  6. Cook over high heat on your grill for approx 20-30 minutes or until tender.

Marshmallow Brownies

Ingredients
  • 1 pkg brownie mix (I use Betty Crocker Hershey's Dark Chocolate, but any works)
  • 2 eggs
  • 1/4 cup water
  • 1/2 cup oil
  • 2 tbsp melted butter
  • 1 cup miniature marshmallows
  • 1/2 cup chocolate chips
  • 1/4 cup Hershey's syrup

  1. In a mixing bowl, combine brownie mix, water, eggs, oil and butter and stir until well blended.
  2. Stir in Hershey syrup and chocolate chips.
  3. Add marshmallows and make sure they are evenly blended into mixture.
  4. Grease either an 8x8 glass baking dish or a 9x9 glass baking dish with butter. (Do not attempt a 13x9 pan. Marshmallows will burn)
  5. Evenly distribute batter into the pan and bake at 350 for 60-65 minutes for an 8x8 pan or 50-55 minutes for a 9x9 pan.
  6. Check center of brownies with a toothpick before removing form the oven. The toothpick should come out moist, but not wet.
  7. Remove, let cool and sprinkle with powdered sugar.

Beef Stroganoff

Ingredients
  • 1 pkg extra wide egg noodles/or steamed rice
  • 2 cans tomato soup
  • 2 cans beef broth
  • 2 cans of beef consomme
  • 5 tbsp Worcestershire sauce
  • round steak, cut into small cubes or strips

  1. Coat round steak in 2 tbsp of flour.
  2. In a large skillet, heat oil and add meat.
  3. Once meat is browned, add tomato soup, beef broth, beef bouillon and Worcestershire sauce. Stir and bring to a boil.
  4. Cover and let simmer for 1-2 hours.
  5. Serve over top of cooked egg noodles or steamed rice.

Tomato n' Jack Mac

Ingredients
  • 1 pkg large shell noodles
  • 1 15oz can tomato sauce
  • 2 cups of shredded jack cheese

  1. Bring noodles to a boil.
  2. Drain and place back in the pot on the stove.
  3. Add tomato sauce and shredded jack cheese.
  4. Stir until cheese melts.

Green Stuff

Ingredients
  • 1 pkg of miniature marshmallows
  • 1 can of crushed pineapple
  • 1 pkg of pistachio instant pudding mix
  • 1 large tub of Cool Whip
  • chopped pistachios (optional)

  1. In a large mixing bowl combine thawed Cool Whip and instant pudding mix.
  2. Add your desired amount of marshmallows, drained can of pineapple and nuts.
  3. Refrigerate and enjoy.

Tuna Noodle Casserole

Ingredients
1 pkg small shell noodles
1 large can of tuna
2 cans of cream of mushroom soup
1/2 cup milk
1 handful of chopped celery (optional)
  1. Boil noodles, drain and place in a large mixing bowl.
  2. Drain can of tuna and add to the cooked noodles, along with soup and celery.
  3. Stir completely and then add milk and continue to mix together.
  4. Place in a glass baking dish and cover with foil.
  5. Bake at 350 for 1 hour. Uncover for the last 10 minutes to brown the top slightly.

Chicken Cacciatore

Ingredients
  • 2 green bell peppers, sliced and seeded
  • 1 large yellow onion, sliced
  • 1 tbsp fresh garlic
  • 8 oz fresh mushrooms, quartered
  • 2 tbsp EVOO (extra virgin olive oil)
  • 1 tsp paprika
  • 4 boneless skinless chicken breasts
  • 2 cans Italian tomato sauce
  • 1 large can diced tomatoes in sauce
  • steamed white rice

  1. Brown chicken on stove top.
  2. While chicken is browning, heat EVOO in a large skillet.
  3. Lightly brown bell pepper, onion and mushrooms in the oil, then add in garlic and continue browning for another minute or so.
  4. Place tomato sauce and diced tomatoes in pan with browned chicken.
  5. once stirred, add paprika and the fried ingredients from the oil.
  6. Cover and simmer for 40 minutes after bringing to a boil.
  7. serve over a bed of steamed white rice.

Serves 4.

Parmesan Chicken

Ingredients
  • 4 Boneless skinless chicken breasts
  • 1/2 cup italian bread crumbs
  • 1/2 cup kraft parmesan cheese
  • 1 stick of butter, melted
  1. Mix bread crumbs and parmesan cheese in a shallow bowl, or on a plate.
  2. Dip chicken breasts in melted butter and coat completely in bread crumb mixture.
  3. Place coated chicken breasts in a glass baking dish dish.
  4. Pour a small amount of melted butter into the bottom of the glass baking dish.
  5. Bake at 350 uncovered for 1 hour.
